It is only here in the Florida Keys where the Yellow Tail Snappers get so large and it makes the best of food fare. Of course, you can just take you catch to most of the local Marathon Restaurants and they cook them in the method you desire. It just makes for the perfect day out on the water!
That area over at Key Colony Beach Marina is an excellent place to start a fishing day. We have taken charters out of there on four different occasion and filled the freezer each time out.
I love Key Colony and Marathon Florida Keys. I'm looking forward to returning, as last December the sailfish season was primetime. Plus, we caught tons of wahoo out in the ocean. In the winter, we tend to do the full day trips. Summer is a bit warm for that, just half a day maximum for me. Sparky's is my top bar spot.

We like the flats if you have less of a budget and anglers that wish to go fishing. Going out deep you need to have live pilchards or cigar minnows to score big for sailfish in the Lower Keys. There is no problem staying nearshore with cast net bait and using the live well for easy inshore fishing action. It works and is nice for saving money when fishing in the Florida Keys.
